Born and raised on the beaches of southern Florida, Chef Mark Vaccaro was pre-destined at an early age for the culinary world, as his first word he spoke was “eat.”
Growing up in a Sicilian family, Mark gained a passion for cooking. He was often found in the kitchen with his aunts and many cousins, helping in the preparations of family feasts.
Mark’s culinary talents are a product of self-teachings and The Food Network. He was also greatly influenced by his apprenticeship at the world-renowned resort, The Breakers of Palm Beach. He also worked at several fine-dining restaurants on Worth Avenue in Palm Beach, where he served celebrities such as Celine Dion and Donald Trump.
After graduation in 2001 with a BBA from the University of Wisconsin, Mark had a fresh idea: to create a business that would allow him to continue his creative culinary path while bringing a unique dining experience to the area. While common in “big city” areas, he sought to create a local Business that would provide gourmet, “big city” cuisine without the “big city” price tag.
With the help of the Stayer family from Johnsonville Foods, he started Fusion by Mark: A Mediterranean Bistro. Fusion-a word meaning to blend, Mark definitely blends his Mediterranean-style flare for cuisine with local Midwest flavors.
